Hospitality Experience: 25 years, including owning & operating his own restaurant / cafe.

Operational Experience: Hotels & Resorts, Restaurants, Cafés & Coffee Shops, Bars and Pubs, Catering Services, Facility & Event Venues, Cinemas and Theatres, Music Venues & Nightclubs, Casinos, Sporting Venues, Festivals and Fairs, Historical Sites.

  • Michael Jones is Atramentum’s Principal Hospitality Consultant with a rich background in the industry spanning various sectors and continents. Before pivoting to a successful career in finance and accounting, Michael honed his expertise across a diverse array of roles within the hospitality industry.

    His journey includes managerial positions in food and beverage, accommodation, theatre, and entertainment, both in Perth and London, as well as in Western Australia's north. His entrepreneurial spirit shone through when he established and managed his own restaurant, Mangia Restaurant/Café in Subiaco.

    Michael's earlier experience prior to opening Mangia are equally impressive, having served as the Front of House Manager for the Perth Theatre Trust, managed various cafes and pub venues around Perth as well as acting as the Front Office Manager at Brown’s Hotel in London in the early 90’s.

    He has led various hospitality consulting projects with Atramentum, including recommissioning & developing the Mosman Park Arts Foundation (MosArts) venue and cafe. Managing the Beaumonde Catering’s food and beverage (F&B) contract, providing F&B at three Perth Theatre Trust venues (His Majesty’s, Subiaco Arts Centre & State Theatre). And leading Emerald Life’s (aged care) Food Experience Transformation Project.

    This extensive experience in the hospitality realm has endowed Michael with unparalleled insights and a hands-on approach to customer service excellence.

  • Sonia’s background is as a Head Chef and her experience includes working as a Head Chef, F&B Consultant, Venue Manager, and Catering Manager in a number of venues in Perth, England and the North of WA, which she owned.

    She was heavily involved in Atramentum’s recommissioning & developing the Mosman Park Arts Foundation (MosArts) venue and cafe and leading Emerald Life’s (aged care) Food Experience Transformation Project.

    Sonia's services are integral to the success of Atramentum’s clients' operations, ensuring that their kitchens are not only well-designed in terms of equipment selection and layout but also meet the highest standards of compliance.
